Cheesymite Scrolls

First it was Milo, now cheesymite scrolls. I don't know what it is but recently i've been craving kids' food!  Not sure what it will be next - maybe fairy bread?

Anyway i leave home too early for the bakery to have baked their supply of cheesymite scrolls, so i decided that i'd give baking them a go instead.

It was super simple and the result is pretty tasty!

Here's what i did although any bread recipe (or scone recipe) would work too.
Cheesymite Scrolls

250g bread flour
250g wholemeal flour
1 tbsp quick yeast
1 tbsp olive oil
275ml lukewarm water
1 tsp salt

Place all ingredients into the TMX bowl and mix on speed 7 for 5 seconds until combined.
Then pulse on the dough setting for 1 minute 30 seconds.
Tip into a greased bowl and leave to rise until doubled in size.

When the dough has risen, knead it gently then roll it out into a large rectangle

Then cover with Vegemite leaving about a 5 cm border on one of the long edges. (Sorry i didn't measure the Vegemite)





Then sprinkle over grated cheese (again i didn't measure... epic blogging fail!)

And roll your beauty up, starting from the long edge that has the filling right to the end (i.e. the top end for mine)

 Roll it as tight and as uniformly as you can. Once it's all rolled up, brush the border with milk to seal.

Then cut it into portions. I cut mine into 8 with will make lunch-sized serves. Place on a tray lined with greaseproof paper and ensure you leave enough room for them to grow.

Because the weather was freezing today i let mine rise in the oven. I turned the oven on to 50 degrees, let it heat up then turned it off and popped in the scrolls. Once the oven got cold i repeated the process until finally my little scrolls had turned into fat scrolls.

 Once the scrolls have risen, preheat the oven to 200 degrees. Cook for 30 minutes until golden. If you want you can glaze with egg/milk to make them shiny (I forgot.)

Then ta-da! You have made your own lunchbox treat!
